I probably don't have the answer to all of your questions, but I thought I would contribute what I know.
Have you considered green smoothies instead of green juices? If you throw in some berries (frozen if you want) and a couple of bananas, it not only will not be green anymore but taste like fruit. Just be sure to chew your smoothies to get the salivary digestive enzymes started. Then maybe eventually you will be interested in green juices.
I have 2 teenagers and a husband who are not interested in going raw either. My daughter has tried but couldn't stick with it. I do fix them a bowl of fruit at most breakfasts that they eat before the rest of their breakfast and a salad at most suppers. Other than that, I just try to make sure the rest of the food in the house is at least free of additives, transfats, etc. so I do a lot of shopping at Whole Foods & Trader Joe's.
I stay motivated with raw food forums such as this one. I used to be on a different one, but they promoted the 80/10/10 approach which doesn't really work for me. I am also blogging. I read e-newsletters from a lot of raw foodists, watch videos, listen to podcasts, and read books. Lastly, the thing that keeps me motivated is keeping the cravings at bay with home colonics. Really helps!
Some raw foodists, including myself, do not eat breakfast. But, if you are hungry at breakfast time then fruit or a fruit smoothie is a great idea. If you are not hungry somedays in the morning, wait until you are which may be lunchtime. This gives your body more time to cleanse & detox & gives your digestive system a rest.
That sounds like a good schedule if it keeps you full and satisfied. It may be too perfect to always stick to though and that could cause you to get upset with yourself and give up and binge on cooked foods (the reason I say that, is that I've been there, done that).
You might need some denser raw foods to fill you up at first. Like avocados & some nuts. I also like an occasional raw flax cracker from
www.therawfoodworld.com with a little raw nut butter on it.
I don't think there is a limit to how much you can eat of the raw fruit and veggies in regards to weight loss, but I would suggest reading Angela's book "How to go Raw for Weight Loss." The one thing I would caution is to not graze all day. Try to eat a good meal and wait a couple of hours before having a snack or another meal. Your digestive system needs a chance to catch up.
Lastly, have you considered going high raw? Angela Stokes story at
http://www.rawreform.com/content/view/17/41/ tells how she ate 70% raw for 3 years (and gained health & lost weight) before she went 100% raw. Just try to avoid the refined starches & sugars (the two worst foods). This way you won't feel like a failure if you eat some cooked food and your body can slowly transition.
_base_d on Matt Monarch's book "Raw Success" and Norman Walker, I believe that if one is not able to do colonics to eliminate the toxins that your body is trying to dump on the raw food diet then a high raw diet is a better option to slow down the detox.
